October 16, 2023 (Elgin, Ill.) – Valerio Draghi has been named Middleby Food Processing Global Product Expert for Dry-Cured Meat Processing Plants. He will provide production support to dry- cured meat processing facilities and assess opportunities for automation, implementing solutions from the Middleby Food Processing portfolio of brands.
Valerio’s experience in the dry-cure meat industry spans several continents and includes seven years as a technical director, where he focused on the unique processes of automatic dry cured meat plants, including a 160 ton per day automatic salami plant and a 75 ton per day pepperoni automatic plant. He holds a mechanical engineering degree from the Politecnico of Milano in Italy and began his career creating specialized clean room facilities for many in the food industry based on their specialized requirements.
